The Chiffon Pancakes are great for a relaxing family breakfast, especially on cool Fall or cold Winter mornings. They are also good anytime as some families like pancakes year-round and sometimes for dinner as well. Lucy’s Apple Kuchen is a recipe I retrieved many years ago from an old Midwestern church. It makes a great brunch item.CHIFFON PANCAKES This is another old recipe from my days growing up in Indiana.1 1/2 cups milk1 egg1 1/2 cups flour2 tbsp sugar4 tsp baking powder1/2 tsp salt1/4 cup cooking oilHeat the milk to lukewarm. Beat the egg with a rotary mixer until soft peaks form. Stir in the warm milk. Sift the dry ingredients together; fold into the egg mixture adding in three addi buy cplex-60 tions. Fold oil slightly into the mixture. Drop from the tip of the spoon onto hot, lightly greased griddle. When pancakes puff to a half-inch thickness and bubbles begin to break the surface, turn and cook on the other side. Serve with butter and warm syrup.LUCY’S APPLE KUCHEN This is a recipe from an old Midwestern Church.1 box white cake mix1/2 cup butter1/2 cups coconut1 cup cultured sour cream1 can apple pie mix3/4 cup sugar1 tsp cinnamon1 egg, beatenPreheat oven to 350 degrees.Stir cake mix, butter, and coconut together; mix like pie crust. Pat mixture into an edged cookie sheet making higher edges. Bake 10 minutes at 350 degrees. In a small bowl or a cup, mix the sugar and cinnamon together. Spread the crust with the apple pie mix and sprinkle with cinnamon/sugar mixture. Mix the sour cream and the egg together and pour over the top.
